Fresh Tuna & Mango Tacos

Summertime is in full swing! And this time of year, as our thoughts wander to visions of beaches, cookouts, and ripe tropical fruits, we all have a craving for fresh, seasonal food. With that in mind, we want to share this recipe for deliciously healthy Fresh Tuna & Mango Tacos. We are sure you will enjoy these as much as we do. Serve them with some chips and salsa, perhaps a cocktail or two, and enjoy in the sunshine.

Fresh Tuna & Mango Tacos

Ingredients:

1/2 lb. Sushi-Grade Tuna

6 TBSP Fresh Lime Juice (3 Limes)Fresh Tuna & Mango Tacos

1 TBSP Coconut Oil, Melted

Several Dashes Fresh Cracked Black Pepper

1/2 tsp Celtic Sea Salt®, or to taste

2 Cloves of Garlic, Minced

2 tsp Chili Powder

2 tsp Ground Cumin

1/2 Mango, Diced

1 Cup Cilantro, Chopped

1 Lime, Cut into Wedges (For Serving)

1 Avocado

6 Soft or Hard Corn Taco Shells or Flour Tortillas, Heated Through

 

Cooking Time: 5 minutes, Total Time: 30 minutes

Makes 6 tacos

 

Slice tuna into 1 inch thick slices. Mix lime juice, melted coconut oil, pepper, Celtic Sea Salt®, garlic, chili powder, and cumin in a bowl and toss with tuna. Marinate tuna for 20 minutes.

Preheat a large sauté pan on medium-high heat.

Add tuna once pan is hot and cook slices for 1-2 minutes on each side. Remove from heat.
In prepared shells, assemble tacos by layering tuna, mango, cilantro, avocado and lime juice. Adjust Celtic Sea Salt® and lime if necessary.
