During the early 1960s, iodine was used as an anti-caking agent during manufacture of bakery products including bread. One slice of bread contained up to 150 micrograms of iodine. But with the bashing of iodine and erroneous concerns about iodine excesses, iodine was replaced with bromine in the 1980s – with huge health consequences.

So hopefully you agree your body needs iodine…

But There’s One More Hot Debate…

How much?   Not even iodine advocates seem able to agree. And need can be very individualized. One thing most advocates DO agree on… Start slow and listen to your body. If you’re detoxing bromide and fluoride, you may experience detox symptoms. Don’t try to do it all in a day.

The Japanese consume a daily average of 13.8 mg. of elemental iodine – and they’re one of the world’s healthiest societies.  So that could be a number to strive towards.

Good Food Sources of Iodine

 The Japanese, not surprisingly, get most of their iodine through ocean grown fish, kelp and other seaweed, and sea salt. (Note: it would take 10 to 20 pounds of fish to provide their 13.8 mg.)

Anything grown near or in the sea may contain iodine. Rich sources include asparagus, garlic, mushrooms, pineapple, and leafy greens. Coconut products are good, as is blackstrap molasses. Butter from near the ocean sourced from cows also fed sea salt is an excellent choice, being also high in selenium and vitamin A. Eggs are good too.

Preheat oven to 325 degrees F. Blend together with a mixer the room temperature cream cheese and butter. Mix in the lakanto and vanilla. In a separate bowl mix dry ingredients including the nuts and seeds. Beat in the eggs to the butter mixture then slowly add the dry ingredients until fully combined. Spoon batter onto a greased or parchment paper lined cookie sheet.

~Chocolate Avocado Mousse Pie~make mom

Crust

1 cup walnuts or pecans

½ cup gluten free graham crackers

½ cup Coconut Organics® Coconut Nectar

¼ tsp cinnamon

1 pinch Celtic Sea Salt® Flower of the Ocean®

PEANUT LAYER

1 cup creamy Selina Naturally® Almond Butter

½ cup whipped cream

CHOCOLATE LAYER

2 Soft Avocados

½  cup raw cacao powder

1 cup Coconut Organics® Coconut Nectar

1 pinch Celtic Sea Salt® Flower of the Ocean®

WHIPPED CREAM

2 cups heavy whipping cream

1 cup coconut sugar (blended)

1 tsp vanilla


In a large food processor add the nuts, graham crackers, coconut nectar, cinnamon and salt. Pulse and blend until fully combined and the mixture becomes a tiny pebble texture. Remove the crust dough and spread it thinly in a pie dish. Rinse the food processor and set aside for use again.

Next start is the whipped cream. In a large bowl beat the heavy whipping cream and vanilla on high for a few minutes until it stiffens into a cream. In a vitamix blend on high 1 ½ cups of coconut sugar to make a powdered version. Blending it will cause it to go down to 1 cup. Once the cream has stiffed begin to slowly add the powdered coconut sugar in small batches at a time and whip in on a slower setting until all the sugar is combined.

Next put the almond butter into a medium sized bowl and fold in ½ cup of the whipped cream until fully combined.

Next add the avocados, raw cacao powder, coconut nectar, and salt into the food processor and blend until fully combined and completely smooth.

Once all the layers are prepared, now you can assemble the pie. Add the almond butter mixture on top of the crust and spread out so it forms about a ½ inch thick layer. Next add the chocolate layer so its about 1 inch thick. Then top with the whipped cream and spread across the pie. Garnish with some raw cacao powder sprinkled on top. Chill for at least 1 hour in the refrigerator before serving so the layers will firm up to make it easier to cut.

It’s always a relief when the warm weather of spring coaxes green sprouts from dried grass. At last, we can go outdoors without piling on coats and scarves. We can go to the park, enjoy the sun,breathe in the fragrant air . . . uh-oh. It’s pollen season. Many of us will try not to breathe that fragrant air, instead we close our doors and windows, turn on air filters, and begin numerous methods to prevent the dreaded onset of springtime allergy season.

But pollen is not the only particle that poses problems to the respiratory system. Dust and indoor mold can irritate the sinuses of allergic persons and colds and flu attack everyone equally. Often allergy flare-ups and colds clear up easily. Sometimes they don’t: the sinuses become inflamed and a secondary infection, known as sinusitis or a sinus infection,sets in. In this article, we will consider the structure of the sinuses, how sinusitis develops and what can be done to prevent and treat sinusitis – naturally.

Colds, flu and allergies make you sneeze because foreign invaders (benign in the case of allergies) have entered the nose. The immune system is alerted and it sends white blood cells and other immune system mediators to the area to fight the invader. Mucus-producing cells produce more mucus to flush the invaders out of the body. The resulting feeling is a stuffy, runny nose – swollen from the immune system cells rushing to the area and runny from the excess mucus.

If you follow the nasal cavity upwards, you will find the sinus cavities. These are hollowed out areas that are lined with mucus membranes. When a person has a cold or allergies,these cavities often become inflamed. Sometimes,the inflammation is so substantial that the sinuses become blocked and cannot drain into the nasal cavity. When this happens, warm mucus sitting in the sinus cavity becomes the perfect medium for bacterial growth. The majority of sinus infections are caused by bacteria that have proliferated in an inflamed, blocked sinus cavity.

While a cold usually resolves in seven to ten days, sinus it is can last three weeks or longer. A person with sinusitis may have a low-grade fever, low energy, bad-tasting mucus drainage, post-nasal drip, facial pain and pressure, nasal obstruction, sore throat and other symptoms similar to a cold. Sinusitis most often progresses from a cold or an

Your heart, for instance, pumps blood; your kidneys filter blood and produce urine; your spleen deals with the blood cells of your immune system, and your lungs take in new air and expel old air.

Conversely, the liver performs many hundreds of different reactions. Because of the huge number of reactions that take place in the liver, there are a wide number of health problems that can result when things   go   wrong.   For  this reason, it pays you to look after your liver, and, fortunately, there are a lot of simple things you can do.

TOXINS

A very important role played by your liver is that of detoxification. It is up to your liver to deal with almost all the toxins that enter your body, either via the air you breathe or what you swallow. Your  liver also processes the compounds that  your body has made and you no longer need, such as various hormones.

DIGESTION

Your liver also plays a vitally important role in the digestive process. It produces the bile that is stored in your gall bladder, the  tiny sac that  sits tucked under the liver. When you eat fat, some of this bile is squirted into the duodenum and helps in the process of fat digestion. If this doesn’t happen, the presence of undigested food will make you feel nauseous. In this article, founder and director of Health Equations, Dr. Lynne August, M.D. answers all your questions about salt but were too afraid to ask.

When I test a patient’s body chemistry, I do so in a way that a farmer tests the soil. I look to see if there are the right amounts and proportions of basic elements in it. I run tests to see if it’s healthy, and if not, how I can make it so.

If a patient’s reading shows adequate sodium, I recommend using salt to taste. And if sodium is low, I recommend using more salt in their diet. Simple, really. Except that this is the part where I get asked the two questions that could make up any FAQ on salt: How much? and What kind of Salt?

So in this article, I will try to answer everything you want to know about salt.

How Much Salt?

I recommend you use salt to taste. I know, you’ve been seeing this all your life in cookbooks and hearing it from every chef in every cooking show on television. But what does this really mean?

According to gastronomes, salt to taste can be anywhere in between a teaspoon or the three-fingered pinch depending on how much you’re cooking. What salt to taste doesn’t mean is to make your dish salty. All salt does is to remove the bitterness in the dish, which highlights other flavors present.

Generally speaking, if something tastes good to you, it is good for you. But because body’s requirements for nutrients constantly changes, so does your need for salt. Today, you may want more salt. Then weeks, even months, later you may want less salt. It will vary and that’s normal.

However, there are two situations when eating by taste doesn’t work: (1) when the body chemistry is out of balance and (2) you are regularly eating processed food.

What Kind of Salt?

In order to eat salt to taste you need to eat it whole and unprocessed. What I always recommend to all my patients is to replace their refined salt with Celtic Sea Salt®, because it contains all the eighty plus elements (minerals and other salts) found in the ocean where it’s derived.

When it comes to flavor, the difference between Celtic Sea Salt® and refined salt is like the difference between a fresh garden tomato in August and a supermarket tomato in February. Which is to say, there’s a whole lot of difference.

Also, in the hundreds of chemistries I have tested of people using Celtic Sea Salt® I have never seen anyone use too much of it.

Did you know…

  • Of all the people with high blood pressure only 10% benefit by reducing their salt intake. This means that salt doesn’t cause high blood pressure in most people. It follows that reducing your salt intake may not even have any direct effect on high blood pressure at all.
  • High blood pressure is dangerous but low blood pressure is also unhealthy. People with low blood pressure often have cold hands and feet, dry skin, poor memory and concentration, constipation or diarrhea and intolerance of cold weather.They also have low Harvesting Celtic Sea Saltenergy. So, they are either too tired to exercise, or tired and depressed if they don’t exercise regularly and a lot, or tired even if they exercise. Salting to taste can improve both their low blood pressure and low energy.
  • Salt must be eaten in proper proportion to all other foods and nutrients. It’s like, if you have the right amount of eggs and baking soda for the pancakes, but not enough flour, the pancakes will still turn out right. The same goes with salt (sodium), even if you have a healthy intake but are lacking in other salts or in minerals, your body’s metabolism will still not function properly.
  • If you perspire regularly (workouts, athletics, running, saunas, etc.) and eat a low salt diet, you are likely losing more sodium than you are taking in. Because of this, you may end up developing a sodium deficiency (even if you do not have low blood pressure). A sodium deficiency will impair your circulation and the function of every cell in your body. The cells most effected by the sodium deficiency will determine what symptoms occur as a result of the lack of sodium.
  • If you eat salt and retain fluid (swell) from the salt, you are most likely calcium deficient and/or you are eating too many carbohydrates (and perhaps not enough protein). It doesn’t necessarily mean that salt is bad for you.
    Many people crave salty snacks because they are not regularly using salt in their diet.

A Short Dictionary of Salt Terminologies

Paludier. These are independent salt producers who still use the traditional way of hand-harvesting salt.

Vasière. A large area where sea water is first collected before it’s channeled to the cobier, adernes, and œillets.

Trappe d’aderne or douelle. These are large settling ponds that create its own ecosystem where the sea water flows before going into the œillets.

Œillet. An œillet is usually a small compartment in the salt marsh lined with a layer of clay and sand to keep pollutants away. This is where the salt is formed and so is maintained regularly.

Ramasse-viel. Tool used to skim over the water to collect the Flower of the Ocean®

Las or Lasse. A long wooden rake used by paludiers to harvest Light Grey Celtic® sea salt.

Flower of the Ocean®. These are small white crystals that collects over the water’s surface. This type of salt is favored by chefs and commands the highest price in the market.

Light Grey Celtic®. As compared to the Flower of the Ocean®, the Light Grey Celtic® has a slightly grey color because it has traces of clay from the bottom of the œillet.

How is Salt Made?

The paludiers of the salt marshes  have been harvesting salt the same way the paludiers, a thousand years ago before them have – by hand. Until now there are no modern machinery allowed within the salt marshes to protect the area and, of course, the quality of the salt.

Fresh sea water is allowed into the marsh for the first time in the beginning of March. This water is carried into the marshes by 15-foot tides, twice daily. The circulatory nature of the Gulf Stream current with the forceful action of the tides is what makes the water they carry very low in pollutants.

The sea water then runs the length of the éiters before settling into large pools called vasière. It’s then channeled through a series of œillets which can vary in number from 30 to 100. It will stay in the œillets for three months before it can be harvested.

During this time the salt is exposed to the sun and wind allowing water to evaporate from each œillet. The paludiers regularly check and clean the œillets to make sure no pollutants got into the brine. They also conduct tests that check for taste, mineral content, and overall quality of the salt in each œillet.

The first harvest is the highly-prized Flower of the Ocean®. Paludiers skim it off the brine using a ramasse-viel before it sinks to the bottom of the œillet. Because of the difficulty in acquiring it, Fleur de Sel sells for a premium. It’s more popularly known as the most expensive salt in the market.

Using the lasse, the next to be harvested is the Light Grey Celtic®. Bits of clay are often harvested together with the Light Grey Celtic®, and is what gives it its grayish tinge. It is then piled in one corner and left to sun-dry.

Salt: Does It Cause Hypertension?

Dr. Lynne August M.D.Why do you recommend the use of salt when everyone else says it’s bad for my health?

First, let us define salt.

Bad for your health = Commercial Salt
Good for your health = Ocean Salt

Commercial salt is the most common kind of salt. The process to get it involves additives, highly toxic chemicals, bleaching agents, and heat. Lots and lots of heat. Which destroys all the nutrients in originally had. Unfortunately, it’s also the most widely used by the food industry.

Ocean salt or unrefined sea salt is made up of 68 trace minerals, enzymes, and electrolytes. Making it involves drying it out in the sun before carefully hand-harvesting the formed crystals. Unrefined sea salt is good for enzyme production, digestive health, and the immune system.

The salt I recommend is unrefined sea salt.

What about salt’s connection to hypertension?

For a long time now, salt as a cause of hypertension has been accepted as a fact. Not just by the public, but even some medical professionals as well. Because of this link to high blood pressure, it has gotten a bit of a bad rap among the health conscious.

Unfortunately, it’s not just a particular kind of salt that suffers from this reputation but all kinds of salt. Even unrefined sea salts such as Celtic Sea Salt® Brand Sea Salts, which is regarded as a potent health cocktail of 68 natural trace minerals, are affected by these generalizations.

But with recent studies showing conflicting results on the effects – or if any – of salt to people with high blood pressure, it’s looking like its connection to hypertension isn’t as much of a fact as you were lead to believe.

More importantly, what these studies are all saying is – hypertension isn’t caused by salt alone. There are many other factors to consider such as age, gender, weight, genes, stress level, family history, diet, ethnicity, etc.

What about calcium or magnesium or potassium salts to lower blood pressure?

Studies on the use of these salts to lower blood pressure have shown mixed results. Probably because these salts are being classified as nutrients instead of drugs, which is what they are. And as such, should be treated just like any other drug – with caution.

Do not assume that just because a drug is also a nutrient occurring in food that it doesn’t have any side effects. But because these side effects are subtle, such as changes in electrochemical potential or pH, they, unfortunately, go unnoticed by a lot of researchers.

Another reason is because nutrients that are used as a drug is often consumed in much higher amounts. This changes the ratio of that particular mineral to every other mineral in the body, creating an imbalance. Which then affects the body’s biochemical processes from cell membrane transport to enzyme function.

So is salt good or bad for us?

The answer?

It’s both and neither.

Because if we were to consider the latest studies on the link between salt and hypertension:

  • The wrong kind and consumption of salt can have an effect on high blood pressure.
  • The consumption of the right kind of salt like Celtic Sea Salt® Brand Sea Salts have been shown to prevent, even cure, high blood pressure.
  • For some hypertensives, consuming any kind of salt won’t have any effect on their condition.

Which means that salt alone cannot cause or cure high blood pressure.

Are you addicted to sugar? If so, you’re not alone. In 2007 a group of researchers found that sugar surpasses what is called “cocaine reward” in most mammals, including rats and humans. The frightening result of this study is the conclusion that sugar is more addictive than cocaine.

 


 

Although sugar does not contain opiates (like other addictive substances such as heroin) it does stimulate the release of endogenous opiates. Opiates and their receptors have largely been attributed to what is known as “reward.” When the opiate receptor is filled over and over again, we feel a sense of pleasure and reward. The story of how Chicaoji was born

Chicaoji_Ingredients-display_photo-7-400x300One day on Lopez Island a good friend who is into Healing with Raw Foods offered me a snack. She loaded up my hand with goji berries and cacao nibs. I had tasted goji and cacao singly in other foods (like hot cereals and chocolate which I love)  but not just those two together. I flipped the whole scoop into my mouth.

As I chewed an amazing flavor developed. A bell went off. My first thought was “WOW, That’s really good but it sure could use just a little spicy heat”. I walked from my friend’s place across a field (where we sometimes play bocce) to Blossom Organic Grocery and bought some of all 7 kinds of chile peppers they had in stock, some goji berries, and some raw cacao nibs. I took them home and started playing with the blender.

I have played around making hot sauces in the past but this little combination was new culinary terrain for me. I used other ingredients I had on hand such as pickling vinegar and salt. I brought the results down to the Vortex Juice Bar and Cafe which is one of the best places to eat on Lopez. The owner, Jean Perry, strives to make the best food she can using locally produced ingredients to the extent they’re available.

I was onto something. I wanted the best possible ingredients so I asked knowledgeable locals what’s best.

For example, I learned that people have salt gurus. Who’d have thought? A friend who had a salt guru in the 70’s said Celtic Sea Salt® is one of the best. Best is good enough.

As the Summer progressed, I explored combinations guided by the responses from fellow Lopezians: “too hot, not hot enough, too sweet, not sweet enough, too vinegary, not enough vinegar, and so forth.” Finally, after much fine tuning, I had a concoction many found delicious.

It didn’t have a name but people were stopping me in the street to say “Hey Randall! When you gonna make more of that sauce?!”

I needed a name. I sat down and broke the words chipotle, cacao, and goji apart into their basic syllables. I came up with CHIpotle, caCAO, goJI: CHICAOJI. A new word for a new sauce.

I see Chicaoji as a sacred mission. I sense that Chicaoji is a coming together, a gathering, of healing tribes of Beings. The ingredients represent what I call Tribes (or Family or Genus or Clan) of Beings including each Ingredient and its home flora and fauna. Each tribe brings to this gathering its own healing gifts. The people who helped Chicaoji come together and now spread out into the world share their own healing and loving gifts even just if it is simply enjoying a meal together.

The age-old adage that “Beauty is only skin deep” is one that has both comforted and vexed many a maiden throughout the centuries. Along with it comes the softly-whispered implication that there is much one can do to improve the character and temperament but we must live with the hand we have been dealt concerning this soul-giftwrapping we call “skin.” Had the sages of old texted, blogged, or instant messaged me prior to going to print on this now-widespread proverb, I would have humbly suggested the following revision: “Beauty begins deeper than the skin.”

The skin is a report card of our internal health status. Skin health is a complex issue that should be treated both from the inside out and the outside in. Here are some helpful tips:

  • Drink water. Sounds like a no-brainer but it’s vital. Just can’t do 8 glasses a day? Then just increase from what you are doing. Every little bit helps.
  • Consider adding fresh squeezed juice of vegetables and fruits to your daily intake. Oftentimes, skin disorders can be due to or exacerbated by a deficiency in one or more minerals.
  • Make sure your daily intake of omega fatty acids is sufficient. You would be surprised at how much this one tip can help.
  • Avoid (or at least lessen) alcohol intake. No? Okay, at least drink more water to counteract the drying effects of alcohol.
  • Eliminate dietary triggers. Many people who have skin disorders are unaware that food sensitivities often trigger flare-ups of dermal problems. Contact a naturopath or other dietary specialist who can test you to determine what you should avoid.
  • Make sure that everything that touches your skin, is helpful to it. From laundry detergents to hand soap to the material of your clothing, all of them should be non-irritating and as natural as possible.
  • Consider making dry skin brushing part of your daily routine. Great for circulation, exfoliation and stimulation of cellular regeneration, this part of your hygiene routine will keep your skin glowing.
  • Have warm (not hot) showers and baths (Native Touch Bath Products). Even a few degrees cooler can help the skin retain its own moisture. And while we’re in the shower, so to speak, banish the archaic belief that soap will dry your skin. Modern bar soap recipes are typically designed to leave a layer of moisturizing natural oils on the skin to aid with emulsion rather than leave it stripped and dry.
  • Use a good natural moisturizer. I invented my own and began a company, Native Touch; but you don’t have to go quite so far. Once you find what works, use it on a daily basis so you are proactively nourishing your skin rather than re-actively treating its problems. Maintenance is always easier than repair.

So, embrace your skin’s challenges and rise to the occasion.  After all, it is only what you have made it to be. You CAN overcome. Healthy skin is beautiful skin.
